Both have good displays with great color accuracy and ample brightness. However, the M30's display is somewhat better then Note 7 Pro one.
Samsung Galaxy M30 is powered by their in-house Exynos 7904 processor which is surely lagging behind of Snapdragon 675 in terms of performance.
But, both phones are capable of performing daily tasks easily.
Talking about software, Redmi Note 7 Pro runs on MIUI 10 based on Android 9 Pie. MIUI is one of the best custom UI and their navigation gestures are just amazing.
Samsung Galaxy M30 comes with Experience UI based on Android 9 Pie. I would love to see new One UI which is much better than Experience UI.
I generally prefer MIUI over Experience UI but all depends on your personal choices.
Redmi Note 7 Pro has a dual camera setup on rear side consisting of 48MP Sony IMX586 sensor and 5MP depth sensor for better portrait photos. There is a 13MP selfie camera for capturing selfies.
